


Gluten-Free Recipes
Four new recipes will drop each month! These are recipes that I have made at home and LOVE. My goal has always been to own a bakery so some of my best recipes will be kept secret:)
New recipes

Ham, Broccoli, Cheese, and Rice skillet
2 1/2 cups chicken broth (brand: Pacific)
1 cup rice
6 oz broccoli chopped
8 oz ham cut bite size
6 oz shredded sharp cheddar cheese
Add broth and rice to saucepan, heat on high to BARELY simmer then, cook on low for 6 minutes. Add broccoli and cook for about 9 more minutes, sprinkle in cheese and add in ham!

No-Bake Cookies
1/2 cup butter
1/2 cup whole milk
1 cup light brown sugar
1 cup sugar
1/4 cup cocoa powder (I use hersheys)
1/4 tsp salt
1 1/2 tsp vanilla extract
3 cups oats (I use one degree, certified!)
In a pot stir butter, milk, sugars, cocoa powder, and salt on low until melted together. Bump it up to boil for one minute only. Remove from heat and add PB, vanilla, and oats. Mix and set out or in fridge for 30 mins to set and enjoy!

Flourless PB banana muffins
2 over-ripe bananas
2 eggs
1 cup PB
1/4 cup honey or maple syrup
1 tbsp vanilla extract
1/2 tsp baking soda
Choc chips as desired!
mash all together with a fork and stir
bake for 13-15 minutes

Apple Overnight oats
1 cup milk
1 cup oats (brand: one degree)
1/2 cup chopped apple
2/3 cup vanilla yogurt
1 tbsp honey
2 tsp cinnamon
2 tsp chia seeds
1 tsp vanilla extract
1/4 tsp salt
mix all together, put in a mason jar, and sit in the fridge overnight!
Chocolate Chip Cookies

3/4 + 2/3 cup King Arthur GF multi-purpose flour

1 tsp baking soda
-
1/2 tsp salt
mix those and keep aside until last step

8 tbsp melted butter
-
3/4 cup brown sugar
-
1/3 cup sugar
whisk until combined then add following
-
1 egg
-
2 tbsp milk
-
1 tbsp vanilla extract (yes tablespoon:))
-
chocolate chips
now add in flour mixture
LET DOUGH SIT FOR 30 MINUTES
oven at 350 for 11-13 minutes
I like my cookies chewy and flat so I put a little less flour than listed
Peanut Butter Cookies

3/4 +2/3 cup King Arthur Gf multi-purpose flour

1 tsp baking soda
-
1/2 tsp salt
mix those and keep aside until last step

1 cup brown sugar

3/4 cup sugar
-
1 cup peanut butter
-
8 tbsp melted butter
mix those and then add the following

2 large eggs
-
1 tsp vanilla extract
now add in flour mixture
LET DOUGH SIT FOR 30 MINUTES
I lightly push a Hershey's kiss into the top of mine!
oven at 325 for 12-14 minutes
Egg Bites

-
5 eggs
-
1 cup shredded cheese (I use Kraft Colby jack block cheese)

1 cup cottage cheese (I use Daisy, or you can use good culture)

1/8 tsp salt
-
add bacon or sausage, I think sausage is better in these! (I use Jimmy Dean regular sausage)
whisk and pour into muffin tins
oven at 350 for 30 mins or until completely cooked
Protein Balls

-
1 cup GF rolled Oats (I use "one degree")
-
1/3 cup honey
-
1 TBSP chia seeds
-
1/2 cup peanut butter
-
1 cup shredded coconut
-
add choc. chips if desired
-
Roll into balls and set in the fridge!
